  • 1/2 red onion
  • 1/2 cup fresh parsley
  • 2 tablespoons rice vinegar

Instructions

  1. Core and seed the red, yellow, and orange peppers; slice them into thin strips and place in a large mixing bowl.
  2. Thinly slice the red onion and chop the parsley, then add them to the bowl with peppers.
