  • 2 cups cherry tomatoes, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/3 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1 large whole wheat baguette, sliced into 1/2-inch pieces
  • Additional olive oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine cherry tomatoes, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Let it marinate for 10-15 minutes.
  3. Slice the whole wheat baguette into 16 half-inch thick pieces. Brush both sides lightly with olive oil.
  4. Place the slices on a sheet pan and toast in the preheated oven for about 8-10 minutes until golden brown.
  5. Remove from the oven and rub the tops with halved garlic cloves.
  6. Spoon the tomato mixture generously over each toasted slice. Optionally drizzle with balsamic glaze before serving.
