  • 2 ounces cream cheese (room temperature)
  • 2/3 cup extra virgin olive oil (divided)
  • 2 tablespoons freshly squeezed lemon juice
  • 2 pounds ripe heirloom or cherry tomatoes (diced)
  • 3 tablespoons julienned fresh basil leaves
  • 20 to 25 slices of baguette (toasted)
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons minced shallots
  • 2 teaspoons minced garlic
  • 2 tablespoons good apple cider vinegar
  • Kosher salt and freshly ground black pepper

Instructions

  1. In a food processor, blend together crumbled feta and cream cheese until smooth. Gradually add in 1/3 cup olive oil, lemon juice, salt, and pepper; process until creamy.
  2. In a medium bowl, mix minced shallots and garlic with apple cider vinegar; let sit for five minutes. Then whisk in remaining olive oil, salt, and pepper.
  3. Gently fold diced tomatoes into the mixture; let marinate for ten minutes.
  4. Toast baguette slices at 400°F (200°C) for 8-10 minutes until golden brown.
  5. Spread whipped feta on each toast slice, top with marinated tomatoes, sprinkle with toasted pine nuts and extra basil before serving.
