  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 23 celery stalks, diced
  • 2 large garlic cloves, minced
  • 1 tablespoon Italian seasoning mix
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons tomato paste
  • 1 1/2 cup tomato sauce (passata)
  • 5 cups chicken stock
  • 3/4 cup orzo
  • 2 cups baby spinach
  • 1/2 cup half-and-half (single cream)
  • 1/3 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery; sauté for about 7–8 minutes until softened.
  2. Stir in minced garlic, Italian seasoning, and red chili flakes; cook for another minute until fragrant.
  3. Add tomato paste and tomato sauce; mix well before pouring in chicken stock. Bring to a gentle boil then reduce heat and simmer for about ten minutes.
  4. Stir in orzo and let cook until al dente, approximately 10 minutes.
  5. Gently add turkey meatballs and spinach; warm through for about 2 minutes.
  6. Pour in half-and-half and sprinkle with Parmesan cheese; stir to combine. Adjust seasoning with salt and pepper as needed.
