  • 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 1 teaspoon vanilla extract
  • ½ tsp baking soda
  • ¾ tsp salt
  • 1 cup all-purpose flour
  • 1½ cups rice krispie cereal
  • ⅔ cup mini vegan marshmallows
  • Flaked salt for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Brown the butter in a saucepan over medium heat until golden; cool slightly.
  3. In a mixing bowl, combine cooled butter with brown sugar and granulated sugar; mix until smooth.
  4. Add the flax egg and vanilla; blend until well combined.
  5. Gently fold in baking soda, salt, and flour until just incorporated.
  6. Fold in rice krispies and vegan marshmallows carefully.
  7. Using a cookie scoop, portion dough onto the prepared baking sheet, spacing them apart.
  8. Bake for 10-13 minutes until edges are lightly golden but centers remain soft.
