Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Stuffing
  • 1 cup brie cheese, cubed rind removed
  • 1 cup apple, diced preferably Granny Smith
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon honey
Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Using a meat mallet, gently pound the chicken breasts to an even thickness.
Make the Filling
  1. In a bowl, combine the brie cheese, diced apple, chopped thyme, and honey.
Stuff the Chicken
  1. Place a portion of the filling in the center of each chicken breast.
  2. Fold the chicken over the filling and secure with toothpicks if necessary.
Season and Bake
  1. Rub the outside of the chicken with olive oil, salt, and pepper.
  2. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
Serve
  1. Remove toothpicks and let the chicken rest for a few minutes before slicing.
  2. Serve warm with your choice of side dishes.
