Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the melted unsalted butter, dark brown sugar, and granulated sugar until light and fluffy. Then add in your apple butter, egg, and vanilla bean paste.
  3. In another bowl, whisk together all-purpose flour, cream of tartar, baking soda, cinnamon, nutmeg, and salt. Gradually add this dry mixture into the wet ingredients while stirring until just combined.
  4. Scoop out portions of dough and roll them into balls about one inch in diameter. Roll each ball in a mixture of granulated sugar and cinnamon before placing them on a lined baking sheet.
  5. Bake for 10-12 minutes or until lightly golden on the edges but still soft in the center. Allow them to cool on the baking sheet briefly before transferring to a wire rack.
