  • 1.25 cups warm water
  • 2.25 teaspoons active dry yeast
  • 2 tablespoons honey
  • 0.25 cups olive oil
  • 1 teaspoon salt
  • 2 medium apples, diced Honeycrisp or Granny Smith recommended
  • 0.25 cups brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 0.5 cups powdered sugar
  • 1 tablespoon milk or cream

Method
 

  1. Mix warm water, honey, and yeast in a bowl. Let sit until foamy.
  2. Add flour, salt, and olive oil. Knead until smooth. Let rise for 1 hour.
  3. Peel and dice apples. Cook with brown sugar, cinnamon, and salt. Add cornstarch to thicken.
  4. Transfer risen dough to greased 9×13-inch pan. Press and stretch dough to fit pan.
  5. Top dough with apple mixture, pressing gently. Let rise for 30 minutes.
  6. Bake at 425°F for 22–25 minutes until golden brown.
  7. Whisk powdered sugar and milk to make glaze. Drizzle over warm focaccia.
