Cooking Steps
- Combine flour and vegetable oil in a heavy pot. Stir over medium heat for 25–30 minutes until dark brown.
- Add chopped onion, bell pepper, and celery. Cook for 5–7 minutes. Stir in minced garlic.
- Add sausage and chicken. Cook to brown slightly. Add Cajun seasoning, bay leaves, Worcestershire sauce, salt, and pepper.
- Slowly stir in chicken stock. Bring to a boil, then reduce heat and simmer for 45–60 minutes.
- Remove bay leaves. Serve gumbo over rice, garnished with green onions and parsley.
