  • 1 pound andouille sausage
  • 0.75 cup all-purpose flour
  • 0.75 cup vegetable oil
  • 1 large yellow onion
  • 1 large green bell pepper
  • 2 stalks celery
  • 4 cloves garlic
  • 6 cups chicken stock
  • 2 tablespoons Cajun seasoning
  • 2 leaves bay leaves
  • 2 teaspoons Worcestershire sauce
  • Salt to taste
  • Black pepper to taste
  • 0.25 cup chopped green onions
  • 2 tablespoons chopped parsley
  • Cooked white rice for serving

Method
 

Cooking Instructions
  1. Combine flour and vegetable oil in a heavy pot. Stir over medium heat for 25–30 minutes until dark brown.
  2. Add chopped onion, bell pepper, and celery. Cook for 5–7 minutes. Stir in minced garlic.
  3. Add sausage and chicken. Cook to brown slightly. Add Cajun seasoning, bay leaves, Worcestershire sauce, salt, and pepper.
  4. Slowly stir in chicken stock. Bring to a boil, then reduce heat and simmer for 45–60 minutes.
  5. Remove bay leaves. Serve gumbo over rice, garnished with green onions and parsley.
