Ingredients
  

Dip Base
  • 2 cups corn kernels fresh or frozen
  • 1 cup cream cheese softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup crumbled feta cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Topping
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup crumbled queso fresco
  • 1 tablespoon lime zest

Method
 

Prepare the Dip
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the corn, cream cheese, sour cream, mayonnaise, cheddar cheese, feta cheese, chili powder, garlic powder, lime juice, salt, and black pepper.
  3. Mix until well combined and creamy.
Bake the Dip
  1. Transfer the mixture to a baking dish and spread it evenly.
  2. Bake in the preheated oven for 25 minutes or until the dip is bubbly and golden on top.
Add Toppings
  1. Remove from the oven and sprinkle with chopped cilantro, crumbled queso fresco, and lime zest.
  2. Serve warm with tortilla chips or fresh vegetables.

Notes
