Ingredients
  

Filling
  • 2 cups fresh blueberries washed
  • 2 cups fresh peaches peeled and sliced
  • 1/4 cup granulated sugar adjust based on sweetness of fruit
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon cornstarch for thickening
Crumble Topping
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter cold and cubed
  • 1/2 teaspoon cinnamon optional

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine blueberries, sliced peaches, granulated sugar, lemon juice, and cornstarch. Toss gently to coat the fruit.
Make the Crumble Topping
  1. In another bowl, mix together flour, oats, brown sugar, and cinnamon.
  2. Add the cold cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Assemble and Bake
  1. Pour the fruit mixture into a baking dish and spread it evenly.
  2. Sprinkle the crumble topping over the fruit mixture.
  3. Bake in the preheated oven for 30 minutes or until the topping is golden brown and the fruit is bubbly.
Serve
  1. Remove from the oven and let it cool slightly before serving. Enjoy warm or at room temperature.
