Ingredients
  

Vegetables
  • 4 cups Bok Choy Chopped into bite-sized pieces
  • 2 cups Mushrooms Sliced, any variety such as shiitake or button
  • 1 cup Bell Pepper Sliced, optional
Sauce
  • 3 tablespoons Soy Sauce Low sodium preferred
  • 1 tablespoon Sesame Oil For flavor
  • 1 teaspoon Garlic Minced
  • 1 teaspoon Ginger Minced
Oil
  • 2 tablespoons Vegetable Oil For stir frying

Method
 

Prepare the Ingredients
  1. Wash and chop the bok choy into bite-sized pieces. Slice the mushrooms and bell pepper if using.
  2. Mince the garlic and ginger.
Make the Sauce
  1. In a small bowl, mix together the soy sauce, sesame oil, minced garlic, and minced ginger.
Stir Fry the Vegetables
  1. Heat the vegetable oil in a wok over medium-high heat.
  2. Add the mushrooms and bell pepper to the wok and stir fry for 3-4 minutes until they start to soften.
  3. Add the bok choy and stir fry for another 2-3 minutes until wilted.
Add the Sauce
  1. Pour the sauce over the vegetables and stir well to combine. Cook for an additional 1-2 minutes.
Serve
  1. Remove from heat and serve immediately, either on its own or over rice or noodles.

Notes
