Method
Prepare the Marinade
- In a mixing bowl, whisk together bourbon, honey, soy sauce, Dijon mustard, garlic powder, and black pepper.
- Place salmon fillets in a baking dish and pour the marinade over them. Let marinate for at least 15 minutes.
Prepare the Peaches
- Preheat the oven to 400°F (200°C).
- In a separate bowl, toss sliced peaches with olive oil and cinnamon.
Roast the Salmon and Peaches
- Place the marinated salmon in the oven and roast for 15 minutes.
- After 10 minutes, add the peaches to the baking dish around the salmon.
- Continue roasting until the salmon is cooked through and peaches are tender, about 5 more minutes.
Serve
- Remove from the oven and let rest for a few minutes.
- Garnish with fresh thyme and serve immediately.
