Ingredients
  

Salmon and Marinade
  • 4 fillets salmon skin-on preferred
  • 1/4 cup bourbon or whiskey
  • 1/4 cup honey for sweetness
  • 2 tablespoons soy sauce for umami
  • 1 tablespoon Dijon mustard for tanginess
  • 1 teaspoon garlic powder for flavor
  • 1/2 teaspoon black pepper to taste
Peach Topping
  • 2 medium peaches sliced
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon cinnamon optional for flavor
  • 1 tablespoon fresh thyme for garnish

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together bourbon, honey, soy sauce, Dijon mustard, garlic powder, and black pepper.
  2. Place salmon fillets in a baking dish and pour the marinade over them. Let marinate for at least 15 minutes.
Prepare the Peaches
  1. Preheat the oven to 400°F (200°C).
  2. In a separate bowl, toss sliced peaches with olive oil and cinnamon.
Roast the Salmon and Peaches
  1. Place the marinated salmon in the oven and roast for 15 minutes.
  2. After 10 minutes, add the peaches to the baking dish around the salmon.
  3. Continue roasting until the salmon is cooked through and peaches are tender, about 5 more minutes.
Serve
  1. Remove from the oven and let rest for a few minutes.
  2. Garnish with fresh thyme and serve immediately.

Notes
