Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Rub the seasoning mixture all over the chicken breasts.
  4. Place the chicken in a baking dish and bake in the preheated oven for 20-25 minutes, or until fully cooked through.
  5. Once cooked, remove the chicken from the oven and let it rest for a few minutes before slicing it into thin strips.
  6. In a large bowl, combine the cooked brown rice, corn, black beans, cherry tomatoes, and red onion.
  7. Divide the rice mixture into serving bowls.
