  • 2 teaspoons vanilla extract Enhances flavor profile.
  • 2.5 cups unbleached flour Forms the base of the cookie bars.
  • 0.5 teaspoon baking powder Provides lift and fluffiness.
  • 1 teaspoon salt Balances sweetness.
  • 1 cup Candy Corn The star ingredient for a festive touch.
  • 1 cup unsalted butter Softened for frosting consistency.
  • 2 cups powdered sugar Sweetens and thickens the frosting.
  • 1 teaspoon vanilla extract Infuses flavor into the frosting.
  • 0.25 teaspoon salt Balances sweetness in frosting.

Method

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 9×13 baking dish with parchment paper and lightly spray it with cooking spray.
  2. In a mixing bowl, combine softened butter and cream cheese using an electric mixer until smooth and creamy. Gradually add sugar and mix well before incorporating eggs and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Slowly add this dry mixture to your wet ingredients, mixing until a dough forms.
  4. Gently fold in the candy corn, ensuring it’s evenly distributed throughout the dough. Pour your batter into the prepared pan and bake for 30-35 minutes or until the edges are lightly browned.
  5. Once baked, remove the cookie bars from the oven and allow them to cool completely in the pan before frosting.
  6. Prepare the frosting by mixing softened butter, powdered sugar, vanilla extract, and salt until smooth. After cooling, spread the frosting evenly over the cookie bars and sprinkle additional candy corn on top before cutting into squares or bars.
