Method
- Preheat your oven to 275°F (135°C). Line a large baking sheet with parchment paper.
- Add Rice Chex cereal into a large mixing bowl.
- In a saucepan over medium heat, melt the butter. Stir in brown sugar and corn syrup. Bring to a boil, stirring constantly, for about 2 minutes.
- Remove from heat and stir in cinnamon, vanilla extract, and baking soda.
- Pour the caramel mixture over the cereal and gently toss until evenly coated.
- Spread the cereal onto the baking sheet and bake for 45 minutes, stirring every 15 minutes.
- After baking, immediately sprinkle with granulated sugar and extra cinnamon if desired. Let cool before serving or storing.
