Ingredients
  

Chicken and Avocado
  • 2 cups cooked chicken breast shredded or sliced
  • 1 large avocado mashed
  • 1 teaspoon lime juice optional
Sandwich Assembly
  • 8 slices whole grain bread
  • 1 cup cheddar cheese shredded
  • 2 tablespoons butter softened
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Method
 

Prepare the Chicken and Avocado
  1. In a bowl, combine the shredded chicken, mashed avocado, lime juice, salt, pepper, and garlic powder. Mix until well combined.
  2. Taste and adjust seasoning if necessary.
Assemble the Sandwich
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side, layer the chicken and avocado mixture evenly on four slices of bread.
  3. Top with shredded cheddar cheese and cover with the remaining slices of bread, buttered side up.
Grill the Sandwich
  1. Preheat the grill over medium heat.
  2. Place the sandwiches on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  3. Remove from the grill and let cool for a minute before slicing in half.
