- Prepare the Filling: Add the salsa, sour cream, green chilies, and all seasonings (except cayenne) into a large mixing bowl and stir well to combine. Fold in the shredded chicken followed by both cheeses until fully incorporated and creamy. Season with cayenne pepper to taste if desired.
- Soften Your Tortillas: Stack about six tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave on high for approximately 60 seconds to make them pliable.
- Assemble the Flautas: Lay out 12-14 tortillas on a clean flat surface. Take about three tablespoons of filling and place it at the bottom third of each tortilla before rolling it up tightly, seam side down.
