Ingredients
  

  • 1/2 cup salsa Medium or hot for more of a kick.
  • 1/2 cup sour cream Adds creaminess and tanginess to the filling.
  • 4 oz. mild chopped green chiles For a touch of heat and flavor.

  • 1/2 teaspoon onion powder Enhances the overall taste profile.
  • 1/2 teaspoon smoked paprika Enhances the overall taste profile.
  • 1/2 teaspoon dried oregano Enhances the overall taste profile.
  • 1/2 teaspoon salt Enhances the overall taste profile.
  • 3 cups shredded cooked chicken Rotisserie chicken works great for convenience.
  • 1 cup freshly shredded Monterrey Jack cheese Melts beautifully inside the flautas.
  • 1 cup freshly shredded sharp cheddar cheese Adds a rich flavor contrast.
  • to taste cayenne pepper or hot sauce Optional for those who like it spicy.
  • 12-14 medium (7-8-inch) flour tortillas The perfect vessel for your filling.
  • vegetable oil Optional if you choose to fry your flautas.

Method
 

  1. Prepare the Filling: Add the salsa, sour cream, green chilies, and all seasonings (except cayenne) into a large mixing bowl and stir well to combine. Fold in the shredded chicken followed by both cheeses until fully incorporated and creamy. Season with cayenne pepper to taste if desired.
  2. Soften Your Tortillas: Stack about six tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave on high for approximately 60 seconds to make them pliable.
  3. Assemble the Flautas: Lay out 12-14 tortillas on a clean flat surface. Take about three tablespoons of filling and place it at the bottom third of each tortilla before rolling it up tightly, seam side down.
