Ingredients
  

For the Chicken and Quinoa
  • 1 cup Quinoa Rinsed
  • 2 cups Chicken Broth Or water
  • 1 lb Chicken Breast Boneless, skinless
  • 2 tablespoons Olive Oil For cooking
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste
For the Coconut Lime Drizzle
  • 1/2 cup Coconut Milk Canned
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 teaspoon Honey Or maple syrup
  • 1/4 teaspoon Salt
For Toppings
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Diced
  • 1/4 cup Fresh Cilantro Chopped

Method
 

Cook the Quinoa
  1. In a medium pot, combine quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork.
Cook the Chicken
  1. While quinoa is cooking, heat olive oil in a skillet over medium heat. Season chicken breasts with garlic powder, onion powder, salt, and pepper. Cook for 6-7 minutes on each side until cooked through. Let rest before slicing.
Prepare the Coconut Lime Drizzle
  1. In a bowl, whisk together coconut milk, lime juice, honey, and salt until smooth.
Assemble the Bowls
  1. In serving bowls, layer quinoa, sliced chicken, cherry tomatoes, cucumber, and avocado. Drizzle with coconut lime sauce and top with fresh cilantro.

Notes
