Cook the Quinoa

- In a bowl, whisk together coconut milk, lime juice, honey, and salt until smooth.

- In serving bowls, layer quinoa, sliced chicken, cherry tomatoes, cucumber, and avocado. Drizzle with coconut lime sauce and top with fresh cilantro.
