Chinese Chicken and Broccoli

Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breast sliced into thin strips
Vegetables
  • 2 cups broccoli florets fresh or frozen
  • 1 medium carrot sliced
Sauce
  • 3 tablespoons soy sauce low sodium preferred
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch for thickening
  • 1 cup chicken broth low sodium preferred
  • 1 teaspoon sesame oil for flavor
Aromatics
  • 2 cloves garlic minced
  • 1 inch ginger grated
Oil
  • 2 tablespoons vegetable oil for cooking

Method
 

Prepare the Chicken
  1. Slice the chicken breast into thin strips and season with a pinch of salt and pepper.
  2. In a bowl, mix the chicken with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch. Let it marinate for 10 minutes.
Cook the Chicken
  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
  2. Add the marinated chicken and stir-fry for about 5-7 minutes until cooked through. Remove from the wok and set aside.
Stir-Fry the Vegetables
  1. In the same wok, add another tablespoon of vegetable oil.
  2. Add minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
  3. Add broccoli florets and sliced carrot, stir-frying for about 3-4 minutes until tender-crisp.
Combine and Serve
  1. Return the chicken to the wok.
  2. In a small bowl, mix the remaining soy sauce, oyster sauce, chicken broth, and sesame oil. Pour over the chicken and vegetables.
  3. Cook for an additional 2-3 minutes, stirring until the sauce thickens.
  4. Serve hot over steamed rice or noodles.

Notes
