  • 1 cup pumpkin puree
  • 1/2 cup brown sugar divided
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1 1/2 cups hot water

Method
 

  1. Preheat oven to 350°F (175°C). In a bowl, mix pumpkin puree, milk, vanilla, and half the brown sugar. Add cinnamon, nutmeg, cloves, and salt. Pour into greased 8x8-inch dish.
  2. In a separate bowl, combine flour, granulated sugar, baking powder, and salt. Mix in melted butter to form a batter. Spoon batter over pumpkin mixture.
  3. Sprinkle chopped pecans over the batter. Mix remaining brown sugar with hot water and gently pour over the top without stirring.
  4. Bake for 40–45 minutes until the top is golden and the filling is bubbly. Let rest 10 minutes before serving.
  5. Serve warm with vanilla ice cream or whipped cream if desired.
