  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter cold, cut into cubes
  • 0.5 teaspoon salt
  • 6 tablespoons ice water
Apple Filling
  • 4 Granny Smith apples peeled and sliced
  • 3 Honeycrisp apples peeled and sliced
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
Topping
  • 1 egg beaten egg for brushing on crust

Method
 

Making the Pie Crust
  1. Cut butter into flour and salt until coarse crumbs form. Gradually add ice water until dough forms. Divide, wrap in plastic, and chill for 1 hour.
Preparing the Filling
  1. Peel and slice apples. Toss with both sugars, lemon juice, cinnamon, nutmeg, and cornstarch. Let sit for 15 minutes.
Assembling the Pie
  1. Roll out one dough disc and fit into a pie dish. Fill with apple mixture. Add butter if desired. Top with second crust, crimp edges, and cut vents or make a lattice.
Baking the Pie
  1. Brush crust with beaten egg. Bake at 400°F for 20 minutes, then at 350°F for 35–40 minutes until golden and bubbly.
Cooling the Pie
  1. Cool at least 2 hours before slicing to allow filling to set.
