Method
 

  1. Prepare Your Ingredients: Start by gathering all your ingredients to ensure you have everything ready before cooking begins. Measure out your spices and chop any herbs you plan to use as garnishes.
  2. Create the Curry Sauce: In a medium saucepan over medium heat, add olive oil and sauté minced garlic until fragrant. Add curry powder, turmeric, ginger, and chili powder; stir continuously for about one minute until spices are toasted.
  3. Combine Coconut Milk and Seasonings: Pour in the full-fat coconut milk along with lime juice, salt, pepper, and honey if desired. Stir well to combine all ingredients and let simmer on low heat for about five minutes to allow flavors to meld.
  4. Prepare the Cod Fillets: While the sauce simmers, preheat your oven to 375°F (190°C). Place cod fillets in a baking dish and season both sides with salt and pepper before pouring half of the coconut curry sauce over them.
  5. Bake the Dish: Cover the baking dish with foil and bake in the preheated oven for approximately 20 minutes or until fish flakes easily with a fork. Remove from oven carefully as steam may escape when uncovering.
  6. Serve and Garnish: Serve warm drizzled with remaining coconut curry sauce on top and garnish with fresh cilantro or parsley if desired alongside lime wedges for extra zestfulness!
