Ingredients
  

  • 2 pieces ribeye steaks (1-inch thick)
  • 6 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped chives (optional)
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (for searing)

Method
 

  1. Pat steaks dry and season both sides with salt and pepper. Let them rest at room temperature for 20–30 minutes.
  2. In a small saucepan, melt butter over low heat. Add garlic, lemon juice, Dijon mustard, smoked paprika, red pepper flakes, parsley, and chives. Simmer gently for 2–3 minutes, then remove from heat.
  3. Heat a cast iron skillet over medium-high heat. Add olive oil.
  4. Sear steaks for 3–4 minutes per side for medium-rare, or longer for desired doneness.
  5. Let the steaks rest for 5 minutes.
  6. Slice the steaks and pour warm cowboy butter over the top. Serve immediately.
