Ingredients
  

Soup Base
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 2 medium potatoes peeled and diced
  • 2 carrots carrots diced
  • 1 cup kale chopped
  • 1 tbsp olive oil for sautéing
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Soup
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon.
  3. Stir in the diced onion and minced garlic, cooking until the onion is translucent.
  4. Add the diced potatoes, carrots, chicken broth, Italian seasoning, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  6. Stir in the chopped kale and cook for an additional 5 minutes.
  7. Taste and adjust seasoning if necessary before serving.
