Cranberry Brie Bites

Delicious bite-sized appetizers made from puff pastry filled with creamy brie cheese and sweet cranberry sauce.

Ingredients
  

  • 2 sheets puff pastry Thawed for easy handling.
  • 1 cup cranberry sauce Adds a sweet-tart flavor that complements the cheese.
  • 8 ounces brie The star ingredient that melts wonderfully.
  • Spray Cooking Oil For greasing the muffin tins.
  • 2-3 tablespoons nuts Finely chopped, optional for added crunch.

Method
 

  1. 15 minutes before you are ready to make the brie bites, place the brie cheese in the freezer. Preheat your oven to 400º F and spray the muffin tins with cooking oil.
  2. Roll out the first thawed puff pastry onto a cutting board and cut the dough into 12 equal parts. Repeat with the second sheet and transfer each piece into the muffin tins.
  3. Take the cold brie out of the freezer and cut the cheese into 24 equal parts.
  4. Place a piece of brie into each puff pastry-lined muffin tin and scoop about one teaspoon of cranberry sauce over each piece of brie.
  5. If using nuts, sprinkle finely chopped nuts over each cranberry sauce layer.
  6. Bake for 11 to 13 minutes until the cheese is melty and the pastry is golden brown. Let them rest for 3 to 5 minutes before removing from the tins.
