- 15 minutes before you are ready to make the brie bites, place the brie cheese in the freezer. Preheat your oven to 400º F and spray the muffin tins with cooking oil.
- Roll out the first thawed puff pastry onto a cutting board and cut the dough into 12 equal parts. Repeat with the second sheet and transfer each piece into the muffin tins.
- Take the cold brie out of the freezer and cut the cheese into 24 equal parts.
- Place a piece of brie into each puff pastry-lined muffin tin and scoop about one teaspoon of cranberry sauce over each piece of brie.
- If using nuts, sprinkle finely chopped nuts over each cranberry sauce layer.
- Bake for 11 to 13 minutes until the cheese is melty and the pastry is golden brown. Let them rest for 3 to 5 minutes before removing from the tins.
