  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood stock or fish broth
  • 2 tablespoons tomato paste
  • 1/4 cup dry sherry or white wine
  • 1 teaspoon Old Bay seasoning
  • 1/8 teaspoon cayenne pepper (optional)
Seafood Ingredients
  • 1 cup heavy cream
  • 1 cup half-and-half
  • 1 cup cooked shrimp, chopped
  • 1 cup lump crab meat
  • 2 tablespoons fresh parsley or chives, chopped

Method
 

Cooking Instructions
  1. Melt butter in a large pot over medium heat. Add onion, celery, and garlic. Sauté until softened, about 5 minutes.
  2. Sprinkle in flour, stirring constantly to create a roux. Cook for 2-3 minutes until lightly golden.
  3. Gradually whisk in seafood stock. Stir in tomato paste, dry sherry, Old Bay, and cayenne pepper. Simmer for 10 minutes.
  4. Blend the mixture using an immersion blender or regular blender until smooth. Return to pot.
  5. Add heavy cream and half-and-half. Stir in shrimp and crab meat. Simmer for 5-7 minutes until seafood is heated.
  6. Ladle into bowls and garnish with fresh parsley or chives. Serve hot.
