Ingredients
  

Butter Beans
  • 2 cans butter beans drained and rinsed
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 medium onion diced
  • 3 cloves garlic minced
Dairy
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
Herbs and Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional for heat
  • to taste salt
  • to taste black pepper
Oil
  • 2 tablespoons olive oil

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in cherry tomatoes and cook until they start to soften, about 3-4 minutes.
Combine Ingredients
  1. Add the drained butter beans to the skillet and stir to combine.
  2. Pour in the heavy cream, and add the spinach, oregano, basil, red pepper flakes, salt, and pepper. Stir well.
Cook the Dish
  1. Simmer the mixture for about 10-15 minutes, stirring occasionally, until the sauce thickens slightly and the spinach wilts.
  2. Stir in the grated parmesan cheese until melted and well combined.
Serve
  1. Taste and adjust seasoning if necessary. Serve warm in a bowl.
