Chicken Thighs
  • 6 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
Spices
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme

Cooking Steps
  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat chicken thighs dry with paper towels. In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, and thyme.
  3. Rub olive oil over chicken thighs and season generously on both sides with the spice mix.
  4. Place thighs skin-side up on the wire rack. Bake for 35–45 minutes until internal temperature reaches 165°F and skin is crispy.
  5. Let rest for 5 minutes before serving.
