Preparation
  1. Preheat the oven to 225°F (110°C).
  2. Line a baking sheet with parchment paper.
  3. Slice the zucchini into thin rounds using a mandoline slicer or a knife.
Coating
  1. In a large bowl, toss the zucchini slices with olive oil, salt, garlic powder, and paprika until evenly coated.
Baking
  1. Arrange the zucchini slices in a single layer on the prepared baking sheet.
  2. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
Cooling
  1. Remove from the oven and let the chips cool on the baking sheet for a few minutes before serving.
