Ingredients
  

  • 1 pound large shrimp, peeled and deveined, tail-on
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 large eggs
  • 1 cup sweetened shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil (for frying)

Method
 

  1. In one bowl, mix flour, salt, pepper, and garlic powder.
  2. Beat eggs in a second bowl.
  3. In a third bowl, combine panko breadcrumbs with shredded coconut.
  4. Dredge each shrimp in flour, then dip in egg, and coat in the coconut-panko mixture.
  5. Heat oil in a skillet over medium heat.
  6. Fry shrimp in batches, 2–3 minutes per side, until golden and cooked through.
  7. Transfer cooked shrimp to a paper towel-lined plate to drain.
  8. Serve hot with sweet chili sauce or pineapple salsa.
