- In one bowl, mix flour, salt, pepper, and garlic powder.
- Beat eggs in a second bowl.
- In a third bowl, combine panko breadcrumbs with shredded coconut.
- Dredge each shrimp in flour, then dip in egg, and coat in the coconut-panko mixture.
- Heat oil in a skillet over medium heat.
- Fry shrimp in batches, 2–3 minutes per side, until golden and cooked through.
- Transfer cooked shrimp to a paper towel-lined plate to drain.
- Serve hot with sweet chili sauce or pineapple salsa.
