Method
- Pound chicken breasts to even thickness and season with salt and pepper.
- Beat eggs in one bowl. In another, mix breadcrumbs, Parmesan, and minced garlic.
- Dip each chicken breast in egg, then coat with breadcrumb mixture.
- Heat olive oil in a skillet and cook chicken for 4–5 minutes per side until golden and cooked through.
- In the same skillet, melt butter and add more garlic if desired. Toss in gnocchi and cook until golden and crispy.
- Slice chicken and serve over gnocchi. Garnish with parsley and extra Parmesan.
