Ingredients
  

  • 2 pieces boneless skinless chicken breasts
  • 2 cloves garlic, minced
  • 1 cup panko breadcrumbs
  • 2 pieces eggs
  • 1/3 cup grated Parmesan cheese
  • 16 oz potato gnocchi
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Method
 

  1. Pound chicken breasts to an even thickness and season with salt and pepper.
  2. Beat eggs in one bowl. In another, mix breadcrumbs, Parmesan, and minced garlic.
  3. Dip each chicken breast in egg, then coat with the breadcrumb mixture.
  4. Heat olive oil in a skillet and cook chicken for 4–5 minutes per side until golden and cooked through.
  5. In the same skillet, melt butter and add more garlic if desired. Toss in gnocchi and cook until golden and crispy.
  6. Slice chicken and serve over gnocchi. Garnish with parsley and extra Parmesan.
