Ingredients
  

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1/4 cup olive oil
  • 1 lemon (juiced)
  • 3 cloves garlic (minced)
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red onion (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup pitted Kalamata olives
  • 1/3 cup crumbled feta cheese for topping

Method
 

  1. Place the chicken thighs or breasts into the crockpot.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
  3. Pour the marinade over the chicken to coat evenly.
  4. Add sliced red onion, cherry tomatoes, and olives on top of the chicken.
  5. Cover and cook on low for 6 hours or on high for 3–4 hours, until chicken is fork-tender.
  6. Before serving, top with crumbled feta cheese and garnish with parsley or dill if desired.
  7. Serve warm with your choice of rice, pita, or salad.
