- Place the chicken thighs or breasts into the crockpot.
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.
- Pour the marinade over the chicken to coat evenly.
- Add sliced red onion, cherry tomatoes, and olives on top of the chicken.
- Cover and cook on low for 6 hours or on high for 3–4 hours, until chicken is fork-tender.
- Before serving, top with crumbled feta cheese and garnish with parsley or dill if desired.
- Serve warm with your choice of rice, pita, or salad.
