  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
Lemon Greek Vinaigrette
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the diced cucumbers, crumbled feta cheese, sliced red onion, and chopped parsley.
  2. Toss the salad gently to mix the ingredients evenly.
Make the Vinaigrette
  1. In a separate bowl, whisk together the olive oil, lemon juice, dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the vinaigrette over the salad and toss gently to coat all the ingredients.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
