  • 2 tablespoons butter
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 jalapeño, finely diced (optional)
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 2 green onions, thinly sliced
  • Tajin seasoning, for garnish (optional)

Method
 

  1. Heat a large skillet over medium-high heat. Add butter and sauté the corn until golden and slightly charred, about 5–7 minutes.
  2. In a large mixing bowl, combine mayonnaise, sour cream, lime juice, garlic powder, chili powder, and jalapeños (if using).
  3. Add the charred corn to the creamy base and mix until well combined.
  4. Fold in cotija cheese, chopped cilantro, and green onions.
  5. Taste and adjust seasoning with more lime juice or chili powder as desired.
  6. Serve warm, at room temperature, or chilled. Sprinkle with Tajin before serving if using.
