- In a large mixing bowl, combine mayonnaise, sour cream, lime juice, garlic powder, chili powder, and jalapeños (if using).
- Add the charred corn to the creamy base and mix until well combined.
- Fold in cotija cheese, chopped cilantro, and green onions.
- Taste and adjust seasoning with more lime juice or chili powder as desired.
- Serve warm, at room temperature, or chilled. Sprinkle with Tajin before serving if using.
