Preparation
- Cream together butter and sugar until light and fluffy.
- Add vanilla and peppermint extract and mix to combine.
- Sift in flour, cocoa powder, and salt. Mix until a dough forms.
- Roll dough between parchment paper to 1/4 inch thickness and chill for 1 hour.
- Preheat oven to 350°F (175°C). Cut out cookies with a round cutter.
- Bake cookies for 10-12 minutes and let them cool completely.
Coating
- Melt chocolate and coconut oil together until smooth.
- Stir in peppermint extract into the melted chocolate.
- Dip each cookie in the chocolate coating and let excess drip off.
- Place on parchment and chill until chocolate is set.
