Method
 

Baking Process
  1. Cream together butter and sugar until light and fluffy.
  2. Add vanilla and peppermint extract and mix to combine.
  3. Sift in flour, cocoa powder, and salt. Mix until a dough forms.
  4. Roll dough between parchment paper to 1/4 inch thickness and chill for 1 hour.
  5. Preheat oven to 350°F (175°C). Cut out cookies with a round cutter.
  6. Bake cookies for 10-12 minutes and let them cool completely.
  7. Melt chocolate and coconut oil together until smooth.
  8. Stir in peppermint extract into the melted chocolate.
  9. Dip each cookie in the chocolate coating and let excess drip off.
  10. Place on parchment and chill until chocolate is set.
