- Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line with silicone molds.
- In a blender, combine eggs, Greek yogurt, and cottage cheese. Blend until smooth and frothy.
- Pour the mixture into a large bowl. Stir in cheddar cheese, chopped spinach, and diced bell pepper. Season with salt and pepper.
- Pour the mixture evenly into muffin cups. If using, add the bacon or turkey sausage to each cup.
- Bake for 22–25 minutes until the centers are set and the tops are lightly golden. Let cool for 5 minutes before removing from the pan.
