Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut the scrubbed sweet potatoes into ½-inch thick rounds.
  3. In a large bowl, toss the sweet potato rounds in olive oil and season with salt and pepper.
  4. Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet. Roast for 20–25 minutes, flipping halfway through.
  5. Warm the honey slightly and drizzle it over the hot sweet potato rounds. Sprinkle crumbled feta cheese on top along with thyme and red pepper flakes if desired.
  6. Arrange the honey feta sweet potato rounds on a serving platter while still warm.
