Method
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut the scrubbed sweet potatoes into ½-inch thick rounds.
- In a large bowl, toss the sweet potato rounds in olive oil and season with salt and pepper.
- Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet. Roast for 20–25 minutes, flipping halfway through.
- Warm the honey slightly and drizzle it over the hot sweet potato rounds. Sprinkle crumbled feta cheese on top along with thyme and red pepper flakes if desired.
- Arrange the honey feta sweet potato rounds on a serving platter while still warm.
