Preparation
- In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
- Stir in flour, baking soda, salt, and pumpkin pie spice. Mix until just combined.
- Pour batter into a greased 9×13-inch pan and bake at 350°F (175°C) for 25–30 minutes, or until a toothpick inserted comes out clean.
- Let the bars cool completely before frosting.
Frosting
- In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
- Spread frosting evenly over cooled bars.
- Slice into 20 squares and serve.
