  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup sliced fresh strawberries
  • 15 pieces Golden Oreos or shortbread cookies crushed
  • 3 tbsp butter melted

Method
 

  1. Prepare a thin vanilla cake sheet (or use a store-bought cake roll) and let it cool completely.
  2. Beat cream cheese with powdered sugar and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream to stiff peaks.
  4. Fold whipped cream into the cream cheese mixture until fluffy and well-combined.
  5. Spread the cheesecake filling evenly over the cake sheet.
  6. Line sliced strawberries along one edge of the cake.
  7. Roll the cake tightly into a log, wrap in plastic, and refrigerate for 1 hour.
  8. Crush Golden Oreos or shortbread cookies and mix with melted butter.
  9. Unwrap the cake roll and coat it in the crumb mixture, pressing gently.
  10. Slice into 12 1-inch sushi rolls using a sharp knife.
  11. Wipe the knife between cuts for clean slices and serve chilled.
