  • 2 large carrots
  • 1 medium zucchini
  • 1 medium red bell pepper
  • 1 medium red onion
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley optional

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Chop carrots, zucchini, bell pepper, and red onion into bite-sized pieces.
  3. In a large bowl, combine all vegetables and garlic. Drizzle with olive oil, sprinkle oregano, salt, and pepper, and toss well.
  4. Spread vegetables in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, stirring halfway, until tender and slightly charred.
  6. Remove from oven and sprinkle crumbled feta cheese on top.
  7. Garnish with fresh parsley if desired and serve warm.
