- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Chop carrots, zucchini, bell pepper, and red onion into bite-sized pieces.
- In a large bowl, combine all vegetables and garlic. Drizzle with olive oil, sprinkle oregano, salt, and pepper, and toss well.
- Spread vegetables in a single layer on the baking sheet.
- Roast for 25–30 minutes, stirring halfway, until tender and slightly charred.
- Remove from oven and sprinkle crumbled feta cheese on top.
- Garnish with fresh parsley if desired and serve warm.
