- Let 1 quart of vanilla ice cream sit at room temperature for about 10 minutes until softened but not fully melted.
- In a large punch bowl or blender, combine the softened ice cream with 3 cups of pineapple juice. Stir or blend until smooth.
- Gently pour in 3 cups of ginger ale and stir lightly to preserve the bubbles.
- Top with whipped cream, fresh cranberries, and mint leaves.
- Serve immediately in chilled glasses.
