  • 3 cups pineapple juice
  • 3 cups ginger ale lightly stirred in
  • whipped cream for topping

  • mint leaves for garnish

Method
 

  1. Let 1 quart of vanilla ice cream sit at room temperature for about 10 minutes until softened but not fully melted.
  2. In a large punch bowl or blender, combine the softened ice cream with 3 cups of pineapple juice. Stir or blend until smooth.
  3. Gently pour in 3 cups of ginger ale and stir lightly to preserve the bubbles.
  4. Top with whipped cream, fresh cranberries, and mint leaves.
  5. Serve immediately in chilled glasses.
