  • 1 cup dill pickle ranch dressing Divided, plus more for dipping after cooking.

Method
 

  1. Marinate the Chicken: Place the cubed chicken pieces into a large bowl and cover them with dill pickle juice. Make sure all pieces are fully submerged, then cover and refrigerate overnight or at least for 8 hours.
  2. Prepare Seasoning Mix: Whisk together kosher salt, black pepper, garlic powder, onion powder, and paprika in a separate bowl.
  3. Assemble the Skewers: Remove the marinated chicken from the refrigerator and drain it from the pickle juice. Thread the seasoned chicken cubes onto the soaked wooden skewers.
  4. Brush with Dressing: Take ½ cup of dill pickle ranch dressing and brush it over the assembled skewers before cooking; save the remaining dressing for after cooking.
