Ingredients

Meat and Vegetables
  • 1 lb stew meat
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
Sauce and Seasoning
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cups beef broth
  • 2 tablespoons cornstarch
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 2 tablespoons cold water for slurry
Cooking Oil
  • 2 tablespoons olive oil

Equipment

  • Large skillet
  • Dutch oven
  • Small bowl

Method

Cooking Steps
  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown stew meat in batches to avoid overcrowding. Remove and set aside.
  2. In the same pan, sauté garlic and ginger for 30 seconds until fragrant.
  3. Return beef to the pan. Add beef broth, soy sauce, and brown sugar. Bring to a simmer. Cover and cook on low for 1.5 to 2 hours, until the beef is tender.
  4. Add broccoli florets during the last 10 minutes. Stir to coat and steam until just tender.
  5. In a small bowl, mix cornstarch with cold water to create a slurry. Stir into the pan. Cook 2–3 minutes until thickened.
  6. Finish with sesame oil and stir gently before serving.
