Ingredients
  

  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1.25 cups whole milk
  • 1 large egg
  • 3 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • butter or oil for the pan

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet mixture into the dry and stir just until combined. Do not overmix.
  4. Gently fold in the blueberries.
  5. Heat a non-stick skillet or griddle over medium heat and grease lightly.
  6. Scoop 1/4 cup of batter for each pancake and cook 2–3 minutes until bubbles form.
  7. Flip and cook another 1–2 minutes until golden.
  8. Serve warm with syrup or toppings of choice.
