- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry and stir just until combined. Do not overmix.
- Gently fold in the blueberries.
- Heat a non-stick skillet or griddle over medium heat and grease lightly.
- Scoop 1/4 cup of batter for each pancake and cook 2–3 minutes until bubbles form.
- Flip and cook another 1–2 minutes until golden.
- Serve warm with syrup or toppings of choice.
