Ingredients
  

Chicken Marinade
  • 1 pound boneless chicken breast cut into 1-inch cubes
  • 3 tablespoons soy sauce low sodium preferred
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 tablespoon vegetable oil for grilling
Garnish
  • 1 cup fresh cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, and red pepper flakes. Mix well.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Thread the marinated chicken onto the skewers, leaving a little space between each piece.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Brush the grill grates with vegetable oil.
  2. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes.
  2. Serve with chopped cilantro and lime wedges on the side.
