Method
Prepare the Marinade
- In a mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, and red pepper flakes. Mix well.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
Prepare the Skewers
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece.
Grill the Skewers
- Preheat the grill to medium-high heat. Brush the grill grates with vegetable oil.
- Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
Serve
- Remove the skewers from the grill and let them rest for a few minutes.
- Serve with chopped cilantro and lime wedges on the side.
