Ingredients
  

Meat and Beans
  • 1 lb Ground beef Can substitute with turkey or plant-based meat
  • 1 can Kidney beans Drained and rinsed
  • 1 can Black beans Drained and rinsed
Vegetables
  • 1 medium Onion Chopped
  • 1 medium Bell pepper Chopped
  • 2 cloves Garlic Minced
Spices and Seasonings
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Salt Adjust to taste
  • 1 tsp Black pepper Adjust to taste
Liquids
  • 1 can Diced tomatoes With juices
  • 1 cup Beef broth Or vegetable broth

Method
 

Prepare the Ingredients
  1. Chop the onion, bell pepper, and garlic.
  2. Drain and rinse the kidney and black beans.
Cook the Meat
  1. In a large pot, brown the ground beef over medium heat until fully cooked, about 5-7 minutes.
Add Vegetables
  1. Add the chopped onion, bell pepper, and minced garlic to the pot. Cook until softened, about 5 minutes.
Combine Ingredients
  1. Stir in the chili powder, cumin, salt, and black pepper.
  2. Add the diced tomatoes and beef broth, and bring to a simmer.
  3. Add the kidney and black beans, and stir to combine.
Simmer the Chili
  1. Reduce heat to low and let the chili simmer for 20 minutes, stirring occasionally.
Serve
  1. Serve hot, garnished with your favorite toppings such as cheese, sour cream, or green onions.

Notes

Chili can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well.
