Easy Stuffed Bell Peppers

Ingredients
  

  • 4 medium bell peppers red, yellow, or green
  • 1 lb ground turkey or lean beef Opt for lean meat to keep the dish healthy.
  • 1 cup cooked rice white or brown
  • 1 can diced tomatoes 14.5 oz, drained
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese Melts beautifully over the stuffed peppers.
  • salt and pepper to taste
  • Italian seasoning optional, customize with your favorite spices.

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds carefully.
  3. In a skillet over medium heat, sauté the onion and garlic until fragrant. Add ground meat and cook until browned; drain excess fat.
  4. In a bowl, combine the cooked meat mixture with rice, diced tomatoes, salt, pepper, and any additional seasonings.
  5. Generously stuff each pepper with the filling mixture and place them upright in the prepared baking dish.
  6. Cover the baking dish with aluminum foil and bake for about 30 minutes. Remove the foil, sprinkle cheese on top, then bake uncovered for an additional 10 minutes.
